Description
It all started in 2005, when we hiked 1,700 miles of a pilgrimage trail called the Saint James Way. We picked up the trail in Belgium with the hope of arriving four months later in Santiago de Compostela, Spain, the ultimate destination. Armed with the scallop shell as the symbol of the Saint James pilgrimage and our backpacks, off we went. After Belgium, we crossed France from north to southwest, over the Pyrenees, through Basque land and deep into Spain to Santiago. More then just a hiking trail, the Camino de Santiago is embedded with history, culture and spirituality, all of which we experienced to the fullest.
People along the trail recognize you as pilgrims and help you, if needed, with food and shelter. One evening, when we where setting up our tent near a church in a small town, a lady brought us some waffles. The next morning, she appeared again with more waffles, and we decided to spend the day with her. She gave us her recipe and taught us how to make her special waffles.
When we arrived in Santiago the Compostela, we felt we were not ready to return to the fast-paced world and continued our hike to Finisterre, which literally means "End of the World." It is a custom for pilgrims to burn their clothes and/or shoes here on these cliffs, symbolizing a rebirth and new start. Looking in our backpacks for shirts to burn, we came across the waffle recipe and, while sitting and reflecting for a week at the end of the world, it suddenly became clear to us that we could do something with this gift. We returned to our new friend and immersed ourselves in waffle-making.
Upon our return to California, we decided to combine our passion for this waffle with our other passion: the air cooled Volkswagen. Months were spent in finding the right vehicle and then the REAL work started: building, welding, grinding, gluing, sanding, painting, and most of all, having a lot of fun. We did all of the design, the logo, the name, the colors, the choice of equipment and the build. As a matter of fact, the red rooster is the symbol of the town where the lady gave us this gourmet recipe, so we are dedicating the name of the company to this wonderful lady and the small town where she lives.
Above all else, what we learned on the trail is that we can achieve our goals and live our dreams. And, one year later, Red Rooster Waffles unique VolksWaffle truck was at the California State Fair on the famous Promenade, August 11th through September 4th, 2006! These days, you can find us at the Roseville Farmer’s Market on Tuesdays and at various fairs and festivals around the Sacramento area. Check out the “Calendar” link on our website.
Our VolksWaffles are authentic Belgian waffles, made of dough instead of batter, to which we add pure ground vanilla and yeast. After the dough has risen for 12 hours, we add a special pearl sugar that bursts and caramelizes when the dough hits the iron, producing a crispy, crunchy outside and a soft, fluffy inside that melts in your mouth with every bite.
